Christmas Chocolate Bark

Can you have food that tastes naughty but is nice? Definitely! This chocolate bark is packed full of great nutrients from the seeds, nuts and berries to go along with the health benefits of dark chocolate. Just don’t have too many pieces!

Serves 12

 

INGREDIENTS

For the oats

  • 300g dark chocolate

  • 100g mixed nuts (include pistachios and brazil nuts if possible)

  • 50g mixed seeds 

  • 25g hemp hearts

  • 100g dried mixed fruit (cranberries, cherries etc)

METHOD

  1. Preheat your oven to 150c. On a lined baking tray add the nuts and mixed seeds (not the hemp hearts) and cook until golden brown, around 10-15 minutes.

  2. Once the nuts and seeds are golden, melt the chocolate on a medium heat in the microwave or in a bowl over simmering water in a saucepan on the hob.

  3. Combine the nuts and seeds with the dried fruit and hemp hearts in a bowl. In a rectangular or square dish (I use a plastic lunch box), line it with greaseproof paper and pour in the melted chocolate, carefully fold in the nut and seed mixture until evenly spread.

  4. Place in the fridge and allow to set. Once set (about 1 hour) cut into 12 pieces.
