Oladky (Ukrainian Pancakes)

Oladky are Ukrainian pancakes which I have veganised. These delicious, light pancakes are wonderful with some Greek style plant based yoghurt, strawberry jam (or another flavour of your choice) and a little drizzle of agave syrup.

 

INGREDIENTS

For the pancakes 

  • 100g plain flour

  • Pinch of salt

  • 1/2 tsp bicarbonate of soda

  • 160g plant based Greek style plain yoghurt

  • 20g apple sauce

  • 30ml plant based milk

To serve

  • Pant based Greek style plain yoghurt

  • Jam

  • Agave syrup

METHOD

  1. In a large bowl combine the flour, salt and bicarbonate of soda. Add the yoghurt, apple sauce, milk and whisk until smooth. The batter should be thick but soft. If it is too thick add a little more milk.

  2. Heat up a large frying pan over a medium heat and put your oven on low with your serving plates inside. When the pan is hot add a little olive oil and coat the pan. Add heaped tablespoons of the batter to the pan and cook for 2-3 minutes before turning over. You are looking for them to be a light golden colour. Place the cooked pancakes in the oven to stay warm.

  3. Continue cooking with the remaining batter until it is all used up. Serve with jam, yoghurt and little drizzle of agave syrup.
